These sandwiches are perfect for leftovers.
What you'll need:
- tri-tip (can be prepared however you like, I slow-cooked mine in the crock pot)
- sliced red bell pepper
- chopped green onion
- olive oil
- cheddar cheese (the more the better)
- rosemary sourdough bread (sliced thick)
Sauté the bell pepper and green onion with about a tablespoon of olive oil. Once you've put your sandwich together, the key is to grill it at a low temperature. You need to give the cheese time to melt without browning the bread too quickly.
Simple, I know... but so good.
