Peanut Butter Chocolate Chip Cookies


One of my favorite combinations is peanut butter and chocolate. That's why I decided to try this recipe from Zoe Bakes. If you're as big of a peanut butter fan as I am, you will absolutely love these cookies.

Ingredients:
  • 1 and 1/2 sticks (12 tablespoons) unsalted butter at room temperature
  • 1 cup brown sugar
  • 3/4 cup chunky peanut butter (Skippy Super Chunk works well)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peanut flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 ounces semisweet or bittersweet chocolate
Preheat the oven to 375 degrees. Using a mixer, mix together the butter and the brown sugar with the paddle attachment for 2 minutes on medium speed. Add the peanut butter and mix well. Add the eggs one at a time. Now add the vanilla.


In a separate bowl, whisk together the peanut flour, baking soda and salt. I bought my peanut flour at Trader Joe's. I couldn't find it anywhere else. 



Add this to the peanut butter mixture and mix until doughy. 


Now add the chocolate. I mixed it in by hand. Roll balls of dough with your hands that amount to be about 3 tablespoons. Use a fork to flatten them and create a crosshatch pattern.


Bake for 8 to 10 minutes. 


These are insanely rich! I can only eat one at a time... which is probably a good thing. Enjoy!

  4. Haha! They are really amazing except... I found that refrigerating the dough and baking a 2nd batch later doesn't work very well. They are much drier. So I recommend making them all immediately and keeping them in an airtight container.

  7. Thanks so much for the recipe! I just made them today and they turned out beautifully! The crosshatch pattern makes them so much more attractive.

    Just a comment though--I couldn't find peanut flour ANYWHERE (it was depressing) so I settled with plain flour, which had no effect to the overall cookie texture, but it certainly tasted less nuttier than I'd expected. I'd recommend anyone using plain flour to top the peanut butter up to a whole cup :)

  9. This recipe looks delish! I can't find peanut flour anywhere here either, I thought of maybe putting in some extra ground peanuts? or using aish's suggestion of topping up the peanut butter. sounds great! going to try it out this weekend :)
