My cousin Amy recently shared her oatmeal cookie recipe with me and they are DELICIOUS! The recipe made about 30 very large cookies so I shared them with my neighbors (warm and right out of the oven). They absolutely loved them.
Ingredients:
- 2 1/2 cups flour
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 3 sticks unsalted butter at room temperature
- 1 1/2 cups dark brown sugar
- 3/4 cup granulated sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 3 cups old-fashioned rolled oats
- 2 cups dried sour cherries
Preheat oven to 350. Line baking sheets with parchment paper. In a medium bowl, whisk flour, cinnamon, salt, baking soda, and baking powder. Set aside.
In a separate bowl, mix (with an electric mixer) butter and sugars until light and airy, 1 to 2 minutes.
Add eggs and vanilla. Slowly add flour mixture, beating on low.
Stir in the oats and cherries.
Drop big spoonfuls of the dough onto baking sheets, leaving 6 inches between cookies.
Bake until edges are just turning brown, about 20 minutes.
Cool for a couple minutes on the baking sheet, then move to wire racks to cool. Enjoy! Thanks, Amy!

ReplyDeleteThanks for the detailed instructions...I am thinking of using the sweetened/bottled cherries instead of the dried ones. I am afraid it may ruin the consistency though. What are your thoughts?
ReplyDeleteHi Anna! I think maraschino cherries would be interesting. They would definitely be juicier and much, much sweeter. I think I like the dried cherries because they are somewhat tart and contrast the sugar in the cookies nicely. It's definitely worth a try, though!
