Banana Bread


Have a few bananas that are just a little too brown to eat? This recipe is the perfect way to put them to use. 

Ingredients:
  • 1 cup granulated sugar
  • 1 stick (8 tablespoons) sweet cream butter
  • 2 large eggs
  • 3 very ripe bananas
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
Preheat oven to 325 degrees. Butter a 9x5x3 inch loaf pan.  Cream the sugar and the butter until light and fluffy. Add the eggs one at a time, beating well after each addition.


In a small bowl, mash the bananas with a fork.


Add the milk and cinnamon to the mashed bananas. 


In another bowl, mix together the flour, baking powder, and baking soda.


Add the banana mixture to the creamed mixture and mix until combined. Add dry ingredients, mixing just until flour disappears. 


Pour batter into prepared pan and bake for 1 hour to 1 hour and 10 minutes or until a toothpick comes out clean.


Allow to cool before slicing. Enjoy!
