Halloween Peanut Butter Cups


I only make these twice a year... around Halloween and Christmas. Why only twice a year? Because I can't stop eating them! You might want to cut this recipe in half because it makes about 100 cups. I like to make this many and then pass them out to friends and neighbors.

Ingredients:
  • 6 cups powdered sugar
  • 4 1/2 cups smooth peanut butter
  • 9 tablespoons unsalted butter
  • 3 lbs dark chocolate (I use Merckens melting chocolate)
  • small paper candy cups
  • new clean paintbrush
  • Paramount Crystals for thinning the chocolate (optional)
  • Halloween sprinkles (optional)

Combine sugar, peanut butter, and butter in an electric mixer. 

Beat on medium speed until combined.

Melt the chocolate in the microwave heating in 10 second increments and stirring in between. Using the paintbrush, brush the insides of each paper cup with chocolate until well coated. 

When the chocolate has hardened, fill each cup with some of the peanut butter mixture, leaving plenty of room on top.

Use a spoon to fill the top of the cups with chocolate. Sprinkle with Halloween sprinkles if you like.

Chill the peanut butter cups in the freezer for about 20 minutes.
Enjoy!

  2. I do something similar but with almond butter, some wonderful fall spices (cinnamon, cloves, nutmeg, ginger, whatever's on hand), vanilla, and a little honey to sweeten. Much healthier, but tastes rich and delicious! They get great reviews. And if you use a dark chocolate with no milkfat (such as Trader Joe's), my vegan friends can enjoy them too. :)

  3. Yum! I love PB cups, but have never tried to make them myself. I might have to give this a go this year, especially at Christmas [since I got requests for baked goodies].
