For my birthday last month my mom bought me an adorable mini loaf pan and I finally put it to use last weekend. I decided to try a new recipe. Adapted from this Pepperoni Pizza Puffs recipe, these mini pizza loaves, served with marinara sauce for dipping, are perfect for a simple homemade lunch.
Ingredients:
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 2 tablespoons Italian seasoning
- 1 tablespoon red pepper flakes
- 1 1/2 cups milk (preferably whole but I used lowfat)
- 2 eggs
- 2 cups shredded mozzarella cheese
- 2 cups pepperoni slices (chopped up)
- 1 jar of your favorite marinara sauce
Preheat oven to 375 degrees and combine the dry ingredients.
Whisk in 2 eggs and milk.
Shred the cheese, chop the pepperoni, and add them to the mixture. Stir together. The consistency should resemble muffin batter.
Grease your pan and divide the mixture evenly. You can use a cupcake pan to bake these too. If you do, bake them for about 20 to 25 minutes. I baked my mini loaves for about 45 minutes, using a toothpick to make sure the centers were cooked through.
Let them cool for a couple of minutes and serve with warm marinara sauce!

ReplyDeleteWhere did you get the mini loaf Pan? I want to try this! The only way I can get my 2 year old to eat meat is with pizza! This is great because I can probably freeze the loafs and thaw out when needed!

ReplyDeleteis it possible to use rising flour in place of flour and baking powder? if so..what would the measurement be?
ReplyDeleteIf you're going to use self-rising, I suppose you could just use the same amount of flour and completely eliminate the baking powder. This link might help...

Hi Kimberly! I've heard that cayenne pepper can be substituted for red pepper flakes. Also, I think another cheese would be just fine. Maybe Monterey Jack? I'd love to hear how it turns out!
ReplyDeleteI just made these and they are in the oven now. The milk is not listed in the directions but I assumed that you add it with the eggs. I was also a little confused as to the consistency of what the dough should look like... I was thinking it would look more like pizza dough and not muffin batter, but after being in the oven now for 20 minutes they look and smell delicious!

DeleteI would love to make these for kindergartener's lunch.....what do you suggest on how to store them? If I made them the night before, then stick them in the fridge, reheating would be the issue? Or is better to try making them early the morning of and wrapping them in foil when they are warm?
ReplyDeleteHi Jami! I would recommend making them in the morning and then wrapping them up. If you make them the night before, I would just store them in tupperware in the fridge and reheat in the oven the next morning. Reheating bread in the microwave never seems to work.

DeleteLove, love, love these!! I made them in a muffin pan and it took 25 minutes, but they turned out amazing! I also used dry milk because I ran out of milk, but it didn't change a thing! Thank you for this simple but delicious recipe! :)

ReplyDeleteI tried these in cup cake pans.. used the cup cake papers and they stuck to the paper! But eating around it worked out. They are so yummy!!
