Simple Breakfast Muffins

My Mom found the recipe for these muffins in Nigella Lawson's How to be a Domestic Goddess and after trying them once, we were hooked. Not only are these muffins delicious and simple, but most of the time the ingredients are already in the house!


Ingredients:
  • 1 1/3 cups all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup sugar
  • fresh nutmeg
  • 1 small orange
  • approx. 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup plus 2 tablespoons dried cranberries

Preheat the oven to 400 degrees. In a large bowl, combine the flour, baking powder, baking soda, and sugar.

Grate and add in a generous amount of the fresh nutmeg. 

Squeeze the orange juice into a measuring cup. Pour the milk on top of the orange juice until it comes to the 2/3 cup mark. Combine with the melted butter and the egg.

Stir the liquid ingredients into the dry ingredients until more or less combined. Lightly fold in the cranberries. I choose to put the mixture into the muffin cups before adding the cranberries because I make some with and some without. Sprinkle each cup with a little sugar and cinnamon.

Bake for 20 minutes and eat them warm! These are perfect with a little butter and jam.
