Baked Apple Puff

I wanted to bake something over the weekend but I was way too lazy to go to the store. Once I decided to use the apples I had, I found this recipe and was pleasantly surprised by how easy it was!

Ingredients:
  • 5 tablespoons butter, divided
  • 3 eggs
  • 3/4 cup milk
  • 3 tablespoons granulated sugar, divided
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 teaspoons ground cinnamon, divided
  • 1/4 teaspoon salt
  • 1/2 cup flour
  • 2 small crisp apples (I actually used about 5 because the apples I had were teeny tiny)

Preheat the oven to 450 degrees. Melt 2 tablespoons of the butter. Crack the eggs into a medium sized bowl. Beat the eggs lightly and then add the melted butter.

Combine milk, 1 tablespoon sugar, vanilla, 1/4 teaspoon ground cinnamon, salt, and flour.

Now combine this mixture with the egg and butter mixture. Mix well.

Peel and thinly slice your apples.

Heat the remaining 3 tablespoons butter in an ovenproof skillet. Add the sliced apples and a dash of cinnamon and cook until golden brown.

Take the skillet off of the heat and pour the batter over the apples. Measure 2 tablespoons granulated sugar and 1 teaspoon cinnamon and stir them together in a small bowl. Sprinkle the cinnamon sugar over the batter. This might seem like a lot of sugar, but it definitely needs the sweetness.

Place the skillet in the oven and cook for 15-25 minutes until brown and puffed. Do not open the oven during the first 15 minutes of the cooking process, or the puff will deflate. Serve immediately.

There's still a chance that the puff will deflate once it's done cooking and you take it out of the oven (mine did). Regardless, it's delicious!
