Red Pepper Relish

I'm hooked on the red pepper relish from Jersey Mike's so I decided to make some of my own. It's perfect for sandwiches, burgers or just add it to some cheese and crackers.

Ingredients:

  • 2 red bell peppers
  • 1 onion
  • 1/2 cup white vinegar
  • 1/2 cup red wine vinegar
  • 1/2 cup sugar
  • 1 and 1/2 teaspoons red pepper flakes
  • a pinch of salt and pepper

Finely chop your bell peppers and onion. I used my trusty food processor.

Add everything to a saucepan and cook on high for about 5 minutes.

Continue cooking (stirring occasionally) on low until most of the liquid is gone.

Allow to cool for about an hour before serving.

    1. I used bell peppers and it tasted just like Jersey Mikes. Red cherry peppers sounds good too.

  2. THANK YOU for this recipe! Had a ton of little red cherry peppers at the end of the summer that weren't all tasty, but beautiful deep red color, plump and juicy. Was looking for something to do with them all. This was perfect! Thanks again for sharing your recipe.
